Coconut Mango Pudding - Gluten and Dairy free

Here is how to start:

  • 2 fresh organic mangoes

  • 1/2 fresh organic coconut

  • Coconut milk saved from the fresh coconut

  • 1/2 cup unsweetened coconut flakes

  • 3 dates

  • splash of lemon juice

  • pomegranate, hemp hearts, and chia seeds (for garnish)


Steps:

  1. Remove the skin and seed from the mango and puree the fruit in a blender.

  2. Add dates and coconut continue to blend until a smooth consistent texture.

  3. Mix in coconut milk, coconut flakes, and lemon juice.

  4. Garnish with pomegranate seeds, hemp hearts and chia seeds.
